A journey through “Culatello Fragrances and Flavours”


On October 6, 2019, a Sunday in the kingdom of Culatello, to discover the history of the undisputed ruler of the Bassa. L’Antica Corte Pallavicina of Polesine Parmense (PR) organizes “Perfumes and Flavours of Culatello”: visit to the Museum of Culatello and Masalén, including tastings of different ages and tasting of selected wines

Parma – A real exhibition in honor of Culatello, which wants to pay homage to the fine meats with visits and guided tastings of three sensory variants of aging, combined with three glasses of different wines, provided for the occasion by the Museum of Wine Sala Baganza (PR). The Antica Corte Pallavicina of Polesine Parmense (PR) celebrates the first birthday of the Museum of Culatello and Masalèn with a series of events entitled “Perfumes and Flavours of Culatello”, where it is planned to visit the exhibition entirely dedicated to the culinary excellence of the area.
Sunday, October 6, 2019 is an experiential tour where, in addition to the three degrees of special aging of Culatello – normally served only in the restaurant attached starry – you can taste the wines of the Ancient Court Pallavicina.
The cost of the visit with tasting is 30 euros per person.

The Museum of Culatello and Masalèn was born from an idea of chef Massimo Spigaroli, developed to offer the opportunity to taste and learn more about the specialties of the Old Court, but also to fully understand the value of ancient craftsmanship. The tours are reserved, in fact, also to deepen the knowledge of the quality of the raw material, or the figure of the pig, in particular the black variety typical of Parma and its specific recovery. It is a story that is intertwined with that of the Spigaroli family, the real protagonists of the section that introduces the Masalén, the norcini, those who have handed down the art of correct slaughter leaving a legacy of objects and emblems of traditional craftsmanship. The next step is the most fascinating one, in the underground part of the ageing cellars, where visitors are welcomed into the secret world of Culatello, at the centre of its production and tasting ritual.
